1 Gently heat the spinach in a pan for 1–2 minutes until wilted. Cool, squeeze out the excess water and finely chop.

2 Gently cook the onion in a frying pan in the oil for 5 minutes, until softened. Stir in the garlic and chilli flakes, and cook for 1 minute more. Toss in a bowl with the spinach, courgettes, rice and cheese.

3 Heat oven to 200C/180C fan/gas 6 and put in a baking sheet. Cut the pastry in half and roll each piece out on a floured surface to 32 × 17cm. Place one half in a 30 × 15cm tin and prick the base. Beat the large eggs with the mustard and some seasoning. Mix with the spinach mixture.

4 Spoon the mixture into the base. Beat together the milk and medium egg, then use some to brush the edges of the pastry. Lay the other sheet of pastry on top and press down gently to seal. Brush with more egg and sprinkle with the seeds.

5 Place the tin on the hot baking tray and bake for 10 minutes. Reduce oven to 160C/140C fan/gas 3 and bake for a further 30 minutes until golden. Cool.
